Amen and Pass the Guacamole

If there's one thing I've learned in my wizened years of motherhood, it's that some days just aren't worth re-hashing.

And when those days happen? Good lunch helps.

Girls, find thyself an avocado and mash it up with a little garlic and a whole lot of lemon. Spread it on health-nut bread, twice as thick as the turkey. Throw on some greens - I promise it'll perk you up.

Sing a hymn of Thanksgiving, if you think you should. At the very least, sing some old-school Phil Collins or Elton John.

Tomorrow is a new day.

  7. i think this was a universal unmentionable day. (actually, we had some fun times at our place, but my insides have this undercurrent of ache that tends to muddy everything.)

    aiming for hopefulness tomorrow, though i'd settle for a good smear of guac if need be.

  10. I made myself a sandwich almost identical to this while Colin and Ruby ate rolled up turkey slices, string cheese and crackers on Tuesday! Yummy!

  23. I have grown to love guac on a sandwich! Since giving up dairy (and everything else) it makes a great spread atop my wheat free bread, broiled chicken breast, pickles and lettuce. I just hope that my insides don't decide to despise avocado any time soon!

  35. Oh my, I definitely look to you for sandwich inspiration. You know you have introduced me to the wonderful world of toasted thin bagels to wrap my sandwiches in some lovin. Now this recipe too?! And my day yesterday was SUCH a doozy. And my lunch? Leftover mashed potatoes my son wouldn't eat. Like? not so much. Hubby and I making grammy's chocolate chip cookies at 10pm? Liking a lot.

  39. You are so darn right. Do you know what I ate for lunch yesterday? A big batch of caramel corn. And no, it wasn't that great...it made me feel sick and crabby and sluggish all day. Stupid was what it was. A long long time ago I used to make myself a nice avacado sandwich or a big healthy salad and it DOES just somehow make your whole day better. Thanks for the reminder. (It would be even better if you could deliver that exact sandwich above to my door? :)

  49. Fearless....fearless you are with a sandwich!!!! Is it not the worlds most perfect food? ENDLESS possibilities, cold, grilled, meat, veggies, cheese, peanut butter, jellies, jams, toasted, broiled, and then there's condiments...I could go on and on and on. So fast to make, nutritional, portable. Honestly, why do we bother to cook anything else? Oh, and then there are the bread choices. Rye, sourdough, pita, whole wheat, Texas toast (I know it's generous of me to even call that stuff bread), pumpernickel (I love saying that word), I better stop. Clearly I am hungry right now. And so I must go make a sandwich. May the new day you find yourself in bring you joy, encouragement, laughter and a great sandwich!

  53. Amen! And might I say, minus the green onion, that's about my favorite sandwich too. Who knew avocado and turkey could be so delightful. And I'd probably end with some Aldi dark chocolate - so good. I love that you shop at Aldi. I'm a little... um, obsessed with Aldi.
    Thank the good Lord for His infinite patience - with both my daughter and me. I'm pretty sure I gave it a run for it's money today.
