Nitrates!!!!
Ah well, nitrates, shmitrates. I'm pretty sure nitrates aren't even real, anyway. I'm pretty sure they're pretend.
I'll just come right out and say it - I dig a dog with mustard and onions. Or chili and cheese. Or kroat. (500 bonus points to the person who understands why I spelled it that way...)
I like mine grilled, but not charred. Never charred.
I recently discovered that I inadvertently enacted a brand-new Summer tradition a few years back. The first cook-out of the season finds me making up a batch of this:
Here's the skinny:
6 cups thinly sliced cabbage
2 medium cucumbers, shredded (with peel)
1 red bell pepper, diced small
1/2 cup white vinegar
1 cup sugar
1 1/2 tsp. salt
1/2 tsp. celery seed
1 tsp. mustard seed
Mix ingredients in a large bowl and allow to sit in refrigerator for at least 24 hours. This will keep for up to 2 weeks. (I usually drain some of the excess liquid off after 24 hours.)
Just try it. You know you want to.

ReplyDeleteIt is like pickled cucumbers and slaw all in one. As for kroat my best guess is a regional pronunciation or it could be the result of the sai kroat and the need for some solitary time?
ReplyDeleteI laughed when I saw your cabbage salad as I made a huge batch of my own version for our Memorial day dinner ~ as a side to grilled pork tenderloin and corn on the cob. My version goes like this: thinly sliced green and red cabbage, sliced scallions, diced red pepper, chopped fresh cilantro ~ then you squeeze a lemon over it, one twirl of canola oil, lightly shaken sea salt and fresh ground pepper. Mmmmm! I just packed the leftovers to have in my lunchbox for today :)

ReplyDeleteHebrew National, boiled (most people don't cook them long enough which is why they dislike boiling dogs), when done place in bun and wrap completely in foil. leave for several minutes. then consume in whatever way flots your boat.

p.s. i am not a vegetarian. we have a freezer full of meat. my husband won't eat a meal without meat. BUT. blah blah blah. sheesh! i have a lot to say.

ReplyDeleteYou surprise me! I love nitrates too. You have really been inspiring me to want to make veggie type foods lately. I look forward to having groceries in the house again very soon. A few weeks ago I had blue cheese cole slaw. It was so good. Do you like blue cheese? I hope so because if not it could negatively impact our friendship.

ReplyDeleteI eat maybe one or two dogs a year and they must be black. With mustard and maybe sharp cheddar cheese. (I know.) Cole slaw is growing on me. It's one of my hubby's very favorite things, so I do make it quite often.
